Mid Boil Question!!! Brewing right now!

Curious - after steeping, we added to get to 3G (for more hop action, as you guys noted) and brought to a boil.

Killed it and added the extract.

At this point, we turned the heat back on and started the countdown of 60 minutes for the boil, but the wort wasn't actually back to a rolling boil until about 10 minutes after the heat was kicked back on.

Should I add those 10 minutes back on to my time to get to 60 total minutes of boiling, or is it ok?



 

you should add the 10 minutes back on.  you want to have boiling going on for 60 minutes.  if this reply is too late and you have already finished, it won't be the end of the world, you just won't get as much hop bitterness as the recipe is based on having.  this is because most recipes call for adding hops at the start of boiling, and then boiling for 60 min.  while the hops are boiled, the acids in them isomerize and give a bitter taste to the beer.  the longer the hops are boiled, the more acid gets isomerized, hence more bitterness.  so not boiling for a full 60 minutes, you'll lose some of that bitterness, but the beer should still come out good.

Am I supposed to still be smelling hops 3 hours later!?!?  big_smile

 

smelling hops hours later usually means you did something right.  what kind of beer did you make?  the hoppier styles like IPA are going to leave a lot more hop smell than less hoppy types.  if you haven't read the book "How to Brew" by Palmer, you can read the entire first edition free online at howtobrew.com.  it might help you out learning some of the things you want to know.



 

Made an American Pale Ale using a Burning River clone as a basis.  Lots of Cascades big_smile

re: Palmer - I have the entire thing in .pdf!  I've read most of it and have a pretty decent grasp of the basics, but it seems like so many variables come into play that I'm still left with questions - and I like getting the real world feedback from all you guys who've been doing it for a while. wink

 

yeah, I learned a lot just by screwing up and learning what not to do.  and by asking stuff here.

 

I've read a few books too and this forum has been the most valuable resource to date for my brewing.  More questions answered here than I can mention.  I think the biggest obsticle for many new brewers is lack of confidence...just like cooking...you're afraid you're going to screw it up, but as you talk to other people and do it more and more you learn not to take yourself too seriously and have fun with it...

So have fun with it!!!

Modern yeast cultures and good sanitation will eliminate most chances of screwing up...you'll probably still end up with a drinkable product even if it's beer you don't particularly like!

 

^ To that point, a small piece of paper from the LME can fell into the wort yesterday...I'm assuming there was a residual of glue and possibly some ink, but instead of freaking out, I'm counting on it not being a factor.  I'm pretty OCD about the sanitation in general, so this kind of pissed me off...still, what are you gonna do?!

True that!  I once looked into the primary after a few days and realized a paper towel had gotten in there (don't ask, I don't know, must have been when I was drying the inside of the pot or cup I was sanitizing to rehydrate the yeast in...either way, it was a fresh paper towel that had most likely just wiped off an iodine solution), what was I gonna do?

Beer turned out fine...
