Orange Peel
i'm planning a witbier and using orange peel, how long do i boil it for?
I did an ESB and used the Dried Bitter Orange Peel and corriander, I added it with my finishing hops at 5 min. They gave the beer a great orange aroma and a slight orange overtone at the back of the pallete. I haven't really every seen too much on if you have to add it by a certian time. I just put it in long enought o sanitize it. Let us know how it turns out
I read between 2-10 minutes. Might want to go the longer route. The Belgian Trippel I just made used candi sugar and I boiled 1# for an hour. Should have used 2# though.

Hey do you hop bag it or treat it like irish moss and just throw it in?
You mean me? I just throw things in. I haven't use a grain bag for hops, irish moss, or ANYTHING in well over a year. I have a stainless steel strainer and a plastic noodle strainer that I stick over the fermenter as I pour in the wort.
So yes, I just chuck the whole hop or fruit in there. I quit using a grain bag when my old homebrew shop owner mentioned the bags pretty much compress the hops and make it more difficult for the flowers to expand a release their oils. Ever since then, I don't use bags anymore.
I just use those strainers like I mentioned. They have worked excellent for me. Whether you are staining hops, orange, lemon peel, whatever... they work great!
I quit using the bags as well after a couple of batches turned out too malty. and then found out that you have to use a lot more hops if you put them the bags. As for orange peel or any other ingrediants a long those lines I just chuck them in the boil too.
Like the others said, toss them in around the flavor/aroma hop additions, 5-15 minutes should be plenty of time. If you are using fresh orange peel and not dried, be careful to scrub them real good and try to get as little of the white part of the orange as possible. The white part will impart quite a bit of bitterness, instead of the citrus character you are looking for in a wit.

I tried a hop bag for hop pellets and ended up dumping them into the wort when they very quickly formed a big, solid lump withing the bag.
Well... my bitch is that is just one more thing to clean. I need to clean and sanitize before and after using it. Once Doug (homebrew shop owner) mentioned that the bags usually just compress the hops and don't allow the oils to dissolve as easily, and the extra cleaning steps, I stopped.
I actually like the method I use now. I was thinking about using nylons since the brewer just throws the whole thing away when done, but again... the compression factor.
I leave the hops in the brew pot overnight while it cools, then pour the wort through my metal strainer and through a funnel into the fermenter. This has been working excellent for 6 months.
