Start with cold water or hot?
If time is a concern hot water is going to be faster, plain and simple. You are talking about two completely different things. If you need to get to boiling, then the fastest way is to use hot water.
Thank you one and all. Deafcone, if the EPA recommends cold water, that's good enough for me. The government must be doing at least one thing right, and I'll guess that this is it.. Whether it's faster to use hot water or cold water apparently is up for debate. But no one seems to say hot gives a better quality water for brewing.
I heat my room temp water then add grains. I never put direct heat on my grains unless I'm intending to add a caramelized flavor to the brew.
Another reason to use cold is that it comes direct from the water supply. The hot water in your tap comes from your hot water tank, where it has been sitting hot in a tank that's probably old and crusted on the inside with minerals and salt and whatnot. It's probably been steeping in that for a long time.
I never ever use hot water for cooking. If I need hot water for anything (like rinsing cooked pasta) I stick cold water in the kettle and boil it, then use that.
