Starting Gravity High




I started a batch of Belgium's Fat Tire Ale last night. My starting gravity should be at 1.050, but it was at 1.13 last night and 1.11 about 12 hours later. The final gravity is 1.11. Should I be concerned? If so, is there anythong I can do?

It's done fermenting in 12 hours? I seriously doubt that. My fastest ever was 3 days, and that's rare. Also, are you positive the OG was 1.13??? My highest ever was in the around 1.080. I can't imagine the OG started that high.

As for the fermentation, give it a few more days and check it again.

 

That was a mis-type on my part. The final gravity should be 1.011. The gravity right now is just about 1.10.

Did you top off your carboy to 5 gallons? It is possible, especially with a longer boil, to boil off up to a gallon of water. I would imagine if you didn't compensate for that boil-off then the wort would be more dense than it should be, hence the high reading.

So the gravity was supposed to be 1.050, but it was 1.13, and after 12 hours, it was 1.11?

I'm still trying to figure out how you got the gravity that incredibly high.

As for where the fermentation stands, let it go for about 7 days and check it again. There doesn't have to be rigorous activity in the airlock.

 

GunnerA,  how about some more details on your brew...did you by chance add extra sugars or honey, etc....?
