Strawberry Wheat???
Ok so I now Im asking a ton of questions but Im new and gotta learn somehow. So here goes for batch 5 (THIS YEAR) my buddy and I are thinking of a strawberry wheat (extract) with fresh strawberries. 5 gallon batch and thinking about 2 pounds of fresh pureed or smashed strawberries. Do we add to primary, secondary or during boil?
Usually I add fruit to the secondary, but I'm sure you could add it to the primary after it stops fermenting. If you add the fruit while it's still going, you could lose some of the aroma and whatnot due to the carbon dioxide produced carrying it away.
No matter what, I suggest that you use a carboy w/ a 1" blow off tube once you add the fruit, even if you go with a secondary. The sugars in the fruit will start some fresh fermentation & fruit tends to clog smaller blow off tubes & airlocks. I'd also use a primary sized carboy or bucket as a secondary as fruit takes up a lot of room inside of your secondary.
As far as how much fruit to use goes, it varies depending on personal tastes, beer style being brewed, & the fruit used. Some fruits stand out better than others in beer. I've never made a strawberry beer, but from my understanding, it's a fruit that you need to use more than you normally would in order to notice it. With all fruit I like to start off at around a pound per gallon, then tweak from there. I dunno, maybe someone else will have better advice on that.

You can do it extract with just simple wheat malt extract (50/50 blend variety).
But this give you an idea about my berry process.
