IS there a beer?

IS there a beer or a way that I could brew a beer that would keep for many years?  I would like to make a beer to enjoy with my son when he is a little older.  He is 5 days old now!!!!!!!  Just looking ahead.  I guess my question is are there any beers, ciders, etc.  that keep like wine......or is carbonation gone at this time?  Just an idea. I think it would be  a nice project if possible.

Barleywines, Imperial Stouts, Belgian Strong ales, and meads can be laid down for 10-20 years.  Good luck on your choice or just brew one of each.  Your second problem is storage w/temp control.  To properly store beers for that length of time requires good cellaring techniques.  Around 51°F is optimum for long term storage.  Meads are much more forgiving and I've heard that there are some that don't hit their flavor peak for 99 years but I just don't have that kind of patience.big_smile

Just put a little hmebrew in his bottle now and then when he's fussy. That's what my mom did and I turned out fine. I've had two liver transplants but that was purely coincedence.

Like Wild said make something big and make something mildly dark.
Dark grains have more antioxidative properties that will help the beer as it ages.

If you are going to try and age something for a long time.  You need to be sure it is clean.
Meaning you need to be certain that you don't pick up any wild yeast or bacteria.  These things may be able to ferment your "unfermentable" contents in your beer and the beer will overcarbonate in time and possible explode.  Most of us drink our beers fast enough that our true cleanliness goes unnoticed.  But if you plan to let the beer age it may be an issue.

Make a vanilla porter....nice and dark, good amount of vanilla as it will mellow out........maybe even add some oak chips soaked in whiskey...

How about Denny Conn's Bourbon Vanilla Porter?  Its on my to-do list.  This recipe was taken from a forum that Denny Conn participates in so I know its spot on.

35 IBUs

13.00 lb 2 row
2.50 lb Munich
1.50 lb Brown Malt
1.00 lb Crystal 120L
1.25 lb Chocolate Malt
0.50 lb Crystal 40L

.60 oz Magnum (60 min)
.50 oz East Kent Goldings (10 min)

Use Nottingham, US 05, WLP001, or Wyeast 1056 (something clean that will attenuate well)

Mash at 154 for 60 min

Use 2 Madagascar vanilla beans.  Split the beans lengthwise and scape the inside of the bean out, cut the whole bean "skin" into as many pieces as you can and put everything into 100mL of vodka for 3 days.  Then dump the whole thing into secondary for 2 weeks.

When bottling add 10mL of bourbon to every 1 pint of beer.  Denny uses Jack Daniels but I hear Knob Creek and Maker's Mark work well also.

I hear its good a few weeks after bottling and also good aged over a year.  I'm sure the vanilla would fade some though.  I guess you could increase the amount of vanilla beans if you wanted to but I wouldn't go overboard. People have also made it with the vanilla or bourbon and have said good things about it.

I think I'm going to enter this in the recipe section so its easy to find.
