turbo yeast
I am a new homebrewer, I have made a few batches that have turned out great. I am doing all grain recipies. I would like to make a stout using a turbo yeast. What kind of flavors would I get and what kind of aBV would i get? Would it evn work?
There are a few questions that need to be answered here first. What ABV are you looking for? what flavors are you hoping to get? What type of turbo yeast are you talking about?
But in general I have used the White labs (WLP099) Super High Gravity Yeast. I used it in a Wee-Heavy and it worked out great. Wound up around 14.5%. The website says that it can handle up to 25% though.
For a Stout to NEED a high gravity yeast you are looking in the Imperial range, and even then might not need a high gravity strain.

Well honestly I was looking at 25% or more if possible.lol
as far as taste, i was actually wanting to use the same kind of yeast that they use in scotch. or should i go with more of a wine yeast like an eau de vie? I want high aBV, great taste and something to be proud of!!!
So you are looking to make a Sam Adams Utopia. your best bet might be multiple fermentations and multipe yeast strains, including a champagne yeast.
you could -EIS the beer too, that would help up the ABV. And it would help to concentrate the flavors. Basically you need a HUGE grain bill and a lot of time for fermentations and aging.
