What does Wyeast 1098 taste like?




I just finished a 7 hour brew session on my third version of Thirsty’s Kodiak Brown. (Thanks again Thirsty it’s in regular rotation.) I made a 1500 ml starter for it, and it got me thinking. What does each yeast taste like on its own? So when I decanted the beer off the yeast I put it in a bottle to compare to other starters in the future. Since I only use DME and yeast, the yeast should be the only difference I taste. It is alot easier than brewing the same beer with different yeast. Anyone else tried this?
I know some yeast are going to be obvious, but say American Ale and American Ale II.



 

I'd worry about what it will taste like after saving it instead of tasting it fresh.
I think it might be better to just taste it now, make good notes.  And keep doing it with every yeast you use.
I'd also repeat the taste test next time you use the same yeast and see if your notes compare well. (Taste it without reviewing your notes first).

Interesting idea.  Keep track and let us know how it goes.

 

I did taste the starter and I think I found the clone for Rainier Beer: DME and 1098, no hops.

I am on my 15th batch this year and I have a few more planned before the new year, so it wouldn't be stored for too long. The plan was to compare the sample with the next batch brewed. I agree the beer from the starter will be oxidized but I think I need to compare two side by side to make sure the flavors are the yeast and not the malt. 1098 was very malty, but was that the DME? I think once I do a few I may be able to just take notes from tasting the starter.
