What is the proper way to use Fruit?
Just bottled a citrus-strawberry wheat, I too made a "relish" out of my oranges and strawberries. I boiled them with about a cup of water added with a lid on the pot for about 5 min.
THEN
I froze them until the day before I was to go to secondary where I racked the finished wort over the fruit relish.
"" I was told at my local brewers supply that relishing then freezing the fruit (mainly the freezing ) breaks down the cell structure and allows more flavor and fermentable sugars out of the fruit""" So whoever suggested a blowoff tube above is in my oppinion, right on the money.
I did experience a re-ferment for a couple days but it did not foam up enough to need the bowoff tube, BUT; it is great insurance!!! Good luck and let us know how you do.
PS... in the past I also used fruit extract and it is MUCH easier and you absolutely will have more consistant results.
Thanks for all the feedback. I decided to go with a Oregon Apricot puree. I added this last night and fermentation has began again, although much more slowly. I have high hopes for this batch as summer is right around the corner. It seems like it would be a great beer to kick off the season with. Thanks again for all the advice.
