Where does bubblegum flavor come from?
Certain beers seem to have a bubblegum flavor to me. Right now, I'm drinking Sierra Nevada's Weizenbock from their Best of Beer Camp selection. The main flavor is bubblegum, in my mind. What's the chemical? I assume that certain yeasts lead to this flavor.
The bubblegum flavor is an ester that is produced by the yeast. Certain Belgian and German strains produce these esters when they metabolize. There are also phenols that can be produced as well, the phenol 4-vinyl guaiacol, is produced when a high amount of wheat is used, and is most evident if an acid rest is performed. This phenol gives off the clove-banana aroma, and contributes to your bubblegum.
