Will My Esters Dissipate?
Hey All,
My apartment is not air conditioned, and this is the time of year for swinging temperatures in Michigan. As a result of this, I've had bad luck keeping my fermenter in stable conditions. Pitched at 70F and in a couple of hours, the thermometer on the side of my Ale Pail was reading 73-75F. The fermenter dropped to about 68-70 overnight. Warmed up again and the second evening dropped to about 66! Oops! So I had some wildly fluctuating fermenter temps, and I'm sure I strained my yeast pretty bad.
So I went to check on ym gravity yesterday and was greeted by a mellow banana smell. Damnit!! Bananas do NOT go good with Roasted Barley and Black Patent! It is my assumption that the banana esters have been caused by my yeast abuse, as the fermenting wort tastes ok besides the B-na
SO my question (finally) is, will the esters diminish with time? Even if it is 6-8 months? Or if the esters make it into the bottle, is there no hope for them diminishing? I really don't want a banana stout, and I'm willing to give it plenty of time if it needs it! Should I do an extra long secondary? I don't have the ability (yet) to cold-condition unless it's in bottles, and I don't even know if that would help.
Please feel free to offer advice concerning my temperature problem as well, although my most likely fix is going to be a 15 cu ft chest freezer, partially b/c it will also allow me to lager!

Are these phenols? I think I read in "Brew like a monk" that phenols do go away eventually. Two other thoughts:
- Fermentation produces all kinds of odors that never make it to the glass, including banana, in my experience.
- If worse comes to worst, you could call it a Dunkelweizen (kidding).
I don't know if the banana aroma is phenol or not! A quick google search seems to indicate it's possible, and I did get one reply on BA saying they had a beer with Nottingham do the same thing and the banana went away, then another guy said it's not possible for esters to go away.
I think I'm just going to have to roll with it and see! I'll use up my xase of 22oz bottles on this one, as I don't like them as much ![]()
