1st mead
I would really like to make a melee for my first mead I plan on using 15 pounds of clover honey (there a bee keeper close to me) and I was thinking about using 7 pounds of fresh blackberries and 7 pounds of raspberries.
I want it to be a sweet mead but not overbearingly sweet, I originally planned on using laving D47 yeast but I was told that strain cant go higher than 12-13% ABV. I was hoping for something between 14-16%. Can anyone recommend different yeast to use?
Also if I get the mead to 16% and back sweeten it, will it still taste good? Or should I just use the D47 and let the ABV stay at 12%.
