Making Perry (pear Mead), Honey added to primary before yeast or after

Hello Everyone,

I have been reviewing a number or recopies for making Perry. Most of them say to add the honey into the primary fomenter before the yeast. One recipe however, says to mix the honey in the primary on the 7th day after the fermentation has commenced. What is the best way ? Will adding the honey on the 7th day improve retention of the honey flavour or sweetness of the mead?

 

I'm not sure why they would say that. You must add the honey first. That is what the yeast is to convert to alcohol. If sweetening up after the ferment, you can add more honey later (after stabilizing) to taste.

Yes - I have been thinking the same thing. However it is there in procedures for one recipe. Could it be that the first 7 days the yeast is eating the sugars from the fresh pear fruit? then at 7 days the honey is added to give the boost? I guess that this may be possible but?? Any further comments.
