Mead with more honey
I am making a mead and here is the recipe let me know what you think. 12# honey from a local bee keeper, 8oz. distilled rose water, juice from four small limes, 3 oz fresh ginger, one packet of red star Pasteur dry champagne yeast, 4tsp. yeast nutrient, and enough water to make four gallons. My starting gravity according to pro mash was 1.126. I'm also planning to add more honey to sweeten it up a little when the ferment is done. A not so surprising note my honey supplier makes mead himself. We ended up spending most of the day discussing mead and homebrewing in general.
