For Milady

So anyway, my lady is at the grocery store & calls me on the cell phone. 
Sez they have a 5# jar of clover honey for $10, should she get it.  Sure,sez I.  Now what am I going to brew out of it? 
Straight mead takes too long & higher ABV than I want. 
In case you haven't noticed, I've got way too many wild berry bushes.  The blackberries are not really sweet, very tart tasting.

So, I thinking, do a honey boil w/water, combine with some apple cider and water in the primary for 5 gal, rack to a secondary with a blackberry slurry and just a touch of Cascade dry hops.  Hoping for an O.G. of 1.040 - 1.050

Anybody every done anything like this, I haven't.  But it sounds good, and she agrees.

 

Your idea sounds good, but how about a braggot.
Half beer/half honey.

 

That's what I would normally think doing.   But, I made some really good mead many years ago.   The lovely lady really liked it, & she also likes hard cider (@ 6.99/sixpack).  So I thought I'd try something w/o malt.
