oak chips and vanilla beans
i've decided to add oak chips and vanilla beans to my latest batch of mead, 5 gal.
i picked up 1 lb of light toast american oak chips and 1 lb of med toast french oak chips from my lhbs for 10 bucks. i'm thinking of sanitizing and adding 2 oz. of each in a sanitized mesh bag for about 10 days. i plan to steam sanitize the 4 oz. of chips in a covered pot on the stove for about 15 min.
i guess i'll split scrape and chop about 2 of the 6 inch beans to go in with the oak chips for ten days. then remove the oak and vanilla beans, and add two more beans for another month or so, to taste.
any thoughts or suggestions on process/amount of ingredients/time/etc.?
I suspect that you won't need the second pair of Vanilla beans.
Two leave a pretty nice aroma, but with the French Oak (also provides a bit of vanilla character in wine), you may find a second pair overpowering.
