Papazians Ginger barkshack\xe2\x80\x99-\xe2\x80\x98antipodal\xe2\x80\x99 Mead

Can you suggest on the 2 mead I have got?

One is Papazian's (?) Ginger Barkshack (7 lbs honey, ginger, premier cuvee yeast) and one is a sweeter one like his 'Antipodal Mead' (15 lbs honey, Cotes des Blancs yeast).

In one month, I'll be leaving the country for a good 9 months and I'd like to let these meads bulk age. So far, both are in the primary still, and getting pretty close to done: the Ginger Barkshack is at 1.008 and the Antipodal is at 1.028, which are only 5-10 points off their expected FG.

My question is, what's the best way to let them age -- do I need to get them off the yeast sediment and the remaining bits of ginger, then just let them sit in the garage for 9 months? Do I have any reason to worry about yeast autolysis? Right now, both are still pretty cloudy.
