Starting Mead ?
I have a plan to start my first 3 gallon mead batch but no one have made in my area befor .
so give me some instruction. i m impressed from "Chaussers" a lot .

I've had Chaucer's mead before at Renaissance Faires. I prefer other meads, but I can tell you that Chaucers's is a sweet mead. You will want to look for recipes that will produce a sweet mead. Use a yeast that will not ferment to a high alcohol tolerance. Try a Prisse de Mousse or white wine yeast, or if your local shop has it use a sweet mead yeast.
