Traditional meads with wildflower honey
I am planning on starting a batch of mead for an experiment and would like to know what anyone here thinks about it. Or with any luck, what the outcome was for anyone who has tried this before.
I am going to start a 5-gallon batch of mead exactly as I would one of my traditional meads with wildflower honey. However, I am going to pitch two Yeast smack packs of Limbic blend.
I am thinking the ale yeasts will take off and ferment until they reach the alcohol limit, and then the Brett should take over. I have read in a couple books that the Brett yeast will ferment about anything and everything given time. I guess we will see what happens. Maybe it'll be great, or maybe just a sacrifice to the worms.
