Type of Yeast for mead
I'm looking for something about 10% and sweet. For a 5 gallon batch I used 4 pounds of frozen blueberries, chopped in a blender (I'll find out if this was a mistake), 10 pounds of honey, about 10 tbsp of strong brewed black tea, and juice from 5 lemons and 5 limes for acidity. I didn't measure the initial gravity, I really need to get a wine theif so I can measure samples from below the floating fruit. I started the fermentation with a beer yeast (It was what I had on hand). Muntons yellow pack, a generic ale yeast which I suspect can get up to about 7 - 7.5%. I made a 1 litre starter and in just a few hours it was fermenting nicely, and still is 2 days later. I was planning on using another ale yeast to finish this off, like strong English ale type yeast to bring this to 10 or 11 %.
This is only my second batch, so I am looking for advice. Will this work?
