Yet Another Mead First Time Mead-er
I'm trying this recipe: Bonk but using actual Mead yeast. Any thoughts?
It's very similar to a mead I made for mead day. Personally, I would go with option 3 for the honey. If you're doing 5 gallons you're going to need (generally speaking) about 15 pounds of honey. I used mesquite since it is the most readily available in my area.
I have never had mead with rosemary in it and am not sure how that would affect the final product.... could be interesting. Oh, and if you can find a newt - I say "go for it."
if this is your first mead, i would reccommend that the first time out you go with something a little simpler. using the spices and rosemary may overpower your honey.
in my opinion, the first time you brew a mead you really want to taste the delicate flavors of the honey and see how the yeast finishes. if you spice it to the nines, you may loose all that. maybe trim down the spice bill, to something simpler...like vanilla and nutmeg only, or some such. choose two that you like best and try that.
just my opinion. mead is a big investment, as honey isn't the cheapest , but more so time-wise. i would hate to brew that up and find out 6 months later that it tastes overpoweringly of rosemary or orange, or doesn't taste good at all with all the conflicting spices.
Ok I went with 10 lbs. regular clover honey, 2 lbs. of cranberry honey, 1 oz. sliced ginger root, skipped the rosemary and peels and made a puree of just under 5 lbs. mix of oranges, strawberries and peaches. Guess we'll give her a sip in...January?
So yeah still plenty of time to go but was wondering about the bottling issue. Since it doesn't have hops would it be ok to bottle mead in green bottles? I have a ton of them sitting around from all the New Glarus Cherry I've imbibed over the last few months.
that is no problem, i bottled my mead in old champagne bottles i had from a summer of sunday mimosas.
no hops = no sunlight issues
Just started a Raspberry Mead last weekend and it's bubbling like a freakin' machine gun...glock glock!
