2008 BKB Fall Community Brew

Like midnight the 30th or 31st, that way we can get going, brew in Sept. & be ready in Oct.

Okay, the above two posts make good sense....let's go with a final voting tally by this Saturday, August 30th, end of the day.  I'll check to see what we have, and post the final total by Sunday morning....

sounds good to me

The afore-mentioned O-Fest recipe has mention of using an American Ale yeast.  Would WL001, WL051, or SafAle 04 fit into this category?  I've got every thing on hand for this except the hops, Munich & chocolate malts

I show my Oh'Face....

If doing an Oktoberfest, probably should make a decision by the end of the week.  Brewchez's recipe calls for something like 3 weeks primary, 3 weeks secondary.  By the time this is brewed, it will be late october, early november.  If we're doing Oktoberfest ale, I'll probably brew up this weekend

Those are the directions that came with that recipe years ago.  I would probably defer to my normal practice of two weeks primary, keg or bottle and then consume when it seems right.

Yeah, WLP001 or WLP051 would be fine.  Even the Irish ale yeast may be nice to highlight the malt flavors of O'fest (WLP004???)

Let me also state that this is a O'fest styled Ale.  Oktoberfest is a larger by design, but not many of our board members are lager brewers.  So a O'fest styled ale is a wide ranging comprimise.

I think the O'Fest ale is a great idea...I actually came up with what looks like a great AG recipe, but ti doesn't convert to the extract version at all.  I like to make mine different, and not always by perfect style guidelines...I'll probably brew both mine and whatever we come up with here.....

That would be my preference too..if I had a fridge still.

So, instead of calling it an O'Fest, we could just call it a Fall Classic Ale, or something like that.....

Hopefully, next year, I'll have power in my as-of-yet non-existent shed, and I can lager the real way......although, I was thinking of trying this using a swamp cooler method, but I'm not sure I want to take a chance with temps going too high while I'm out of the house at work or wherever.....

I was going to call it O'Face O'Fest Ale, but I guess Fall Classic Ale works just as well. big_smile

I don't remember what a "swamp cooler" is off hand.  I remeber hearing about it before.  Could someone refresh my memory please?  I'd like to start getting into lagering, but the Mrs. doesn't want me to get the fridge to do it.  Not enough room in the house is the excuse, but I'm sure I can find enough space;).  The swamp cooler thing might be a way to at least get started with it until I do.

A swamp cooler is basically a tub, or container large enough to hold the fermentation vessel, and enough water to come up about halfway.  Put the vessel in, fill with some water, and a couple frozen bottles of water, and that should help to keep the temp lower than just sitting in the dry air.  You need to check to frozen bottles often to make sure they stay frozen, or at whatever you need to maintain the desired temperature.

Well, I got the fridge, and a thermostat. but I need to sirch the thermostat and don'r know how to do it. Most likely I'll ruin the fridge trying to take stuff apart to find the thermostat wiring.
hmm

So, do we have a decision??
