2008 BKB Spring Brew Brainstorm

Okay, so we finally have the AG and converted Extract w/ grains recipes.  Hopefully, we'll have a bunch of great brews in some time....

I'll be doing the extract version with a freind.  I guess we should try to have a brew deadline.  I can't brew this weekend, and maybe the next.  I just closed on a condo today, and I have a lot of crap to take care of.  If we say brewing to be completed mid to late February, that leaves March and April for fermentation and lagering.

Here they are......


2008 BKB Spring Brew Kolsch
All Grain Recipe

9 lb. 8 oz. German Pilsner
8 oz. Wheat malt
8 oz. German Munich

60 minute boil

Hops:
.5 oz. Hallertauer (4.25% AA, 60 min.)
.5 oz. Hallertauer (4.25% AA, 45 min.)

1.00 tsp Irish Moss (Boil 20.0 min)

Yeast : WLP 029 Kolsch



2008 BKB Spring Brew - Kolsch
Extract w/grains recipe
---------------------------------------------


6 lb. 8 oz. Pilsner Liquid Extract
8 oz. Munich Malt 
8 oz. Wheat Malt
Steep grains at 150 for 45 minutes.
60 minute boil

Hops:
1.5 oz. Hallertauer (4.25% AA, 60 min.)
.5 oz. Hallertauer (4.25% AA, 45 min.)


1.00 tsp Irish Moss (Boil 20.0 min)

Yeast : WLP 029 Kolsch

 

Sounds good, ricka.  I will be attempting to do my boil 3 weekends from now, counting this one, so that should put me right on schedule.

Just to clarify on the boil, this is for a 2.5 gal boil or a full 5 gal boil or other?

 

Yup, 3 gallon boil.  I may do a bigger boil, only because I'm itchin to use my new 60qt stainless......

 

This is a perfect brew for me next.  I have about 25 pounds of Pilsner Malt that is just dying to get used up.
So this brew moves to the top of my "Brews-to-do" list.

Nice work on the thread and co-ordination.


I think that in another month people can start chiming in with where they are with the brew.
Once the exchangers are ready we can take start making the arrangments for who swaps with whom, and then get it done.

I ordered my stuff today. Should get it first of the week. Had trouble finding hops at reasonable prices so I will be using mt hoods I have on hand. Looking at hop charts it's a useable subsitution.

Also using WL001 California ale yeast. Similar to 1029 but without the sulphur addition.

I may able to start this next weekend, but I'll have to wait and see how the new house cleaning and moving goes first.  This may be my first batch at the new place, so that would be kind of cool I guess.......

Regardless, I'm sure we'll all have fun brewing as usual; and more importantly, create quality homebrew, that we intend to share with the community....

Yes.  I used the Recipator for the AG recipe, and I believe Beersmith was used to convert it.  Posted below is the full Recipator report for the AG version.


BKB 2008 Spring Brew Style: Kölsch

Type: All grain
Size: 5 gallons
Color: 4 HCU (~4 SRM)   
Bitterness: 23 IBU
OG: 1.052 FG: 1.006
Alcohol: 5.9% v/v (4.6% w/w)

Grain:
9 lb. 8 oz. German Pilsner
8 oz. Wheat malt
8 oz. German Munich
Mash: 65% efficiency

Boil: 75 minutes SG 1.043 6 gallons

Add Irish Moss at 20 minutes

Hops:
.5 oz. Hallertauer (4.25% AA, 60 min.)
.5 oz. Hallertauer (4.25% AA, 45 min.)
.5 oz. Hallertauer (4.25% AA, 30 min.)

Yeast: WLP 029 - Kolsch

 

I put it in beer tools and it was in spec except for color which came out over 7 SRM due to the liquid malt extract for the extract version.

Recipe:

6 lb. 8 oz. Pilsner Liquid Extract
8 oz. Munich Malt
8 oz. Wheat Malt

.5 oz. Hallertauer (4.25% AA, 60 min.)

I tweaked it and will use the following:


4 pds light DME
1 pd extra light DME
8 oz german light munich malt
8 oz german light wheat malt

(I used these dme's in calculations as they didn't have a pilsner dme or liquid option for these)( I will actuall be using alexander pale malt liquid)

Origional recipe showd 20 IBU for hops using .5 oz for each addition. I was calculating a 3 gallon boil and 40% efficiency.

You can get 24 IBU doing the following:

.75 oz 60 min
.50 oz 45 min
.50 oz 30 min.

I will be using just a 60 min boil hop addition and shooting for 23 or 24 for IBU in mine using mt hood.

The specs for my version are:

OG: 1.047
TG: 1.009
SRM: 4.18
IBU: 24.4
Alcohol: 5%

Attention extract brewers.  After reviewing the recipe, I discovered a mistake.  Both recipes called for indentical hop additions.  However, with a smaller boil for extracts, there is a lower hop utilization rate, and therefore a change was made.  i have already to edited the recipe post, but to highlight the changes, see below.

Originally, called for :

Hops:
.5 oz. Hallertauer (4.25% AA, 60 min.)
.5 oz. Hallertauer (4.25% AA, 45 min.)
.5 oz. Hallertauer (4.25% AA, 30 min.)
Would have produced IBU of 16, below style range

Has been corrected to :

Hops:
1.5 oz. Hallertauer (4.25% AA, 60 min.)
.5 oz. Hallertauer (4.25% AA, 45 min.)
Will produce IBU of 23, same as AG, and in range for style
