the color is going to be a litlte tricky, its going to depend on the products you buy, try to research the lovibond before you purchase anything to make sure, another option is to use less pils LME and maybe use some extra light DME. IMO
if we aren't able to get the pilsner liquid extract what would you suggest if i wanted to use DME... like how much of it will i need compared to the LME, and what do you suggest, a mixture of the light and extra light, or just all extra light?

For a 5 gallon batch of kolche, 5 pouds of dme will get you on the mid to low side of the OG readings. Use some light and some extra light. I tried all extra light on beer tools and it was too light for the color spec. 4 pounds of light DME and 1 pound of extra light will get you mid to upper range of the color spec. Also you can add half of the dme with 15 minutes left in the boil to reduce darkening of the wort from boiling.

I'll probably be using the Alexander extra light LME just because it's readily available at my LHBS, cheaper too.
So can we call this the official recipe?
Maybe it is time to start another thread to report how the brewing is going.
I suggest 1st two post to be the recipe all grain and then the extract version.
Yes, this is the official recipe. I think before we just kept the original thread going for a few more pages. If everyone wants to constantly update their status, maybe we should start another thread. Although, to stay with the community idea, a new thread should include everyone. I'll start a thread for updates, and we can post our progress there.....any questions or comments can remain here, or whatever...all this beer typing makes really thirsty for beer, and it's only 9am here....mmmm, beer and eggs....

I can't get Hallertauer, but I have a couple OZ's of Tradition I can use.
Here's the bill:
8oz Pale Wheat (Wyermman)
8oz Light Munich (Wyermman)
2# Extra Light MDE
3# Light DME
1.5oz Tradition @ 60min
.5oz @ 45min
Wyest Kolsch Yeast 2565
Ok, I am also in for the extract recipe as for the fact I do not have all grain capacity........Yet!
I have 3 batches on hand so I will schedule this brew for the 20th of February, which I hope is not too late.
Finally, my local home brew supply shop does not have Hallertau hops.
Any suggestions on substitutes? Or should I just break down and buy something from a website?
A Kolsch should have one of four Noble hops. Hallertauer, Tetnanger, Spalt or Saaz. Any of those can be substitutes, and still be within stlye....
I'm using Mt hoods as it is listed as a subsitute for Hallertauer. Tetnager is hard to find, Spaltz is expensive.
I would say try to use Hallertauer but if you can't make sure to post it on the update thread so we can compare the differences with who we swap with. Same with yeast, and any grains you add or subtract from the recipe.
Cost is a big issue for me for reasons I won't get into so i need to be frugal in my brewing for a few months.
