Wow, a guy takes a couple days off & look what happens.
I'll jump on the Kolsch train, I've never brewed one.
The partial mash recipe looks real good.
Is anyone having problems finding the proper hops?
Put me down for the exchange. 12oz or 22oz ??
I'll have an empty primary pretty soon, & don't have anything scheduled.

I like the lower amount of wheat malt just to keep it clear. I have brewed some of Jamil's recipes before, they are not complex, but his technique is so good he makes consistantly perfect beer. Just a suggestion.
I also got a kolsch in a beer exchange a few months ago and the guy used kaffir lime leaves at the end of the boil. It tasted rather perfumy, but if we all make the same recipe, maybe we could consider a personal twist option as well?
Wow i guess the "Designing Great Beers" taught me a few things!!! I'll take it as a compliment that I was close to Jamil's recipe.
As far as the vote: I vote all grain recipe to be completed first. Then we can convert that to an acceptable partial mash, extract with grains then all extract brew. Also i believe this is a great chance to learn. So if we make a suggestion for a ingredient or change, please state why.
Personally why the carpils?
Why 2 different hops? I think one hop with two additions will make for a very nice low hop tone that still overbalances the malt just slightly.
One other way we could go with this thing... We could make an all American Kolsch! Simply use american pilsner, american wheat ( i like red wheat), american hops ( i like Mt hood) and an american ale yeast that can act akin to a kolsh yeast.
Big point! No hop additions after 30 min... aroma is not a point of this beer. Actually the lack thereof is the major point.
BTW, those close to Kentucky. Kentucky Ale Light is an American Kolsch. Just found that out at my LHBS.
Okay, so to stay true to Koslch style, we'll forego the late hop addition, and kick up the amount at 30 minutes.
As for doing all grain first, I don't know how many AG brewers we have, but if it's easier to do an AG first, than convert to Extract with grains, so be it. Also I don't think we need an Extract only recipe; I personally can't see how anyone can't steep grains. It's easy enough like a big tea bag, but if someone wants to convert it all the way, go ahead. I suggest we have only AG, and Extract w/grains, for simplicity. Even though I prefer a partial mash, I'll stick to extract w/grain. Less recipes, less confusion, less differences in final products.
I suggested two hops, only because I've seen a few other recipes with multiple hops; and the style can have more than one, provided they should all be in the Noble family of hops, which both were. I think Hallertau or Tetnang is available for all, so maybe we should go with one of those as our hop choice.
Does anyone here have the software required to convert AG to Extract? I know someone does, and I may have it later. I have to find my credit cards and buy the software anyway; now is just as good a time to do so.
As for the exchange, I usually do 12oz, only because I have more of them. It shouldn't matter. We can send whatever each person has, and wants to send. More beer isn't better, more better beer is better.

The only problem with this style is that it may be difficult for some folks to get pilsner malt extract. Certainly the beer can be made without it and just go as light an extract as you can find.
I just point this out so that our extract brewing brothers and sisters don't feel left out or challenged.
So call you LHBS or be prepared to look on-line if rigidly sticking to a recipe is your thing.
Personally I think that brewing this up with normal 2 row extract would be fine. Maybe you consider lightening it with some cane sugar as a substitute.... but we can get into that later.
Lastly, I am all for hashing out an All-grain recipe, but if people want to see it go from extract to grain first.
I think that would be a fine exercise.
I just want to be sure we are supporting all levels of brewer here.

(BTW, and I am not suggesting it stay at 10 the more the merrier)
I'll be getting my supplies at Beer-Wine. I'm not sure if they have Pils extract, I've only seen light, not extra light. I'm pretty sure they have everything else needed includuing hops and yeast....
As for extract first, or AG first, I don't care. As long as we have a version for both, so as Brewchez mentioned, we have a recipe for all.....
