midwestsupplies.com has Briess Pilsen DME. Is that similar or close to Pilsner LME??
Midwest Brewing Supplies has extra light DME.
As for a recipe, I'd wager most of us could handle a partial mash.

I've got about 400 grolsch bottles cause I keg only now, so whoever my lucky receiver will be will get their kolsch in true to style flip tops. What do we want to send? Say 3 bottles 12 or 16, 2 if you prefer 22s?

Okay, so I'm going to suggest the following recipe. It is in AG format, someone with the software can convert it to Extract. This recipe is just about as basic a Kolsch recipe I could think of. Keeping it simple seems to be the way to get this done. Please add comments......
9 lb. German Pilsner
8 oz. Wheat malt
8 oz. German Munich
Boil: 60 minutes SG 1.041 6 gallons
Hops:
.5 oz. Hallertauer (4.25% AA, 60 min.)
.5 oz. Hallertauer (4.25% AA, 45 min.)
.5 oz. Hallertauer (4.25% AA, 30 min.)
Yeast : WLP 029 Kolsch
Color 4 HCU (~4 SRM)
Bitterness: 24 IBU
OG: 1.049 FG: 1.006
Alcohol: 5.6% v/v (4.4% w/w)
I think I may of gotten lost on the exchange program somewhere after "thirsty's " idea...?

SG seems too low. 1.044-1.049 is style, 4.4-5 Alcohol(volume)
Also I really feel a 1.5 then 0.5 or vis versa addition of hops will better complete the bittering without adding an aroma to the beer.
Just tried a true German import Kolsch "Reissdorf Kolsch" Beer was very light and crystal clear with a noticeable bitter note. Head absorbed rapidly and upon pouring was very small. Aroma was slight with grassy and with a slight berry flavor from the yeast. The malt flavor does push through, but the hop bitter is definitely a little above the malt profile.
When I brew I will be using what hops I have on hand. I already have 3 kinds and need to use some of those up.
I also will most likely be adding them just for the 60 min boil.
When recipe is finalized I will order grain, malt, and yeast.

If needed, we could up the German Pilsner another 1/4 to 1/2 Lb, that would bring the SG up a little. Also, the hops shouldn't put out too much aroma, with the last addition at 30 minutes. Adding more would increase the bitterness, maybe too much I think. I ran the numbers for adding 1.5 then 5 and vice versa both would bring the IBUs above 30, which is the limit for this range. As for choice of hops, I'm not sure everyone can get Spalt, which was my first choice also. I'm pretty sure that Hallertauer or Tetnang is available evrywhere, and based at least one request, I put in Hallertauer.
As far as I know for the exchange, yes each person should ship one, and receive one. If there are localized brewers that want to exchange more, that's would work too. But everyone should get a chance to enjoy someones elses brew, regardless of where they live.
