What hops do you have? Technically, to be true to style, they should one of four varieties; Spalt, Tetnang, Hallertauer, or Saaz.
I would think this recipe is close to being finalized, unless we continue to get changes and suggestions. I'm sure everyone will do their own thing, slightly different than everyone else. The idea is to make a simple Koslch; I think we have a good simple Kolsch recipe here.
I think that recipe looks pretty simple, although I'll need it converted to extract at least for the pilsner malt. My roommate has some software that can do that so I'll see if he can convert when I get home tonight. I might modify those hop additions slightly when I boil the wort, but depends on what hops I can get also.
Also, I haven't talked to my roommate about it yet, but we're both in the exchange program, so perhaps we could set something up with whoever we are chosen to send to where instead of sending 2 22oz bottles alone, we could each send 3-4 12 oz bottles, 6-8 total, so whoever gets our brews could have a little more variety to try. If that's the case though, I'm sure we'd prefer to get the same amount of brew in return to try. Anyway, just a thought if two people wouldn't mind sending 6-8 12 ozers our way for a mix of our two styles.

The best and easiest way to do that would be to set up a direct swap for you and your receiver, as long as we have an even number of exchangers.
The round robbin works great because of:
1. An odd # of people can participate and everyone gets and gives
2. You get to meet (PM or whatever) 2 memners, one to receive comments on yours and the other to give comments to. A direct swap limits to just one meeting. If we were to do this each quarter or season, over time we could build a more knowledgeable board.

Fair enough, but I think you're also missing part of my point. If my roommate and I each send out 6-8 12 oz, 3-4 of each of ours in each package, then two people out there will get to try 2 additional brews instead of just 1. If the rest of the people in the exchange agree to do 6-8 12 oz brews as well, then my roommate and I will each get 3-4 of two separate brews to try, and everyone else will send 6-8 and receive 6-8.
I hope that is makes sense. I'm not trying to exclude anyone here. Just proposing the option for my roommate and I to split ours that we send out so our receivers get additional variety to drink if they'd want.
I don't care how we do the swap. I'll send whatever to whoever. I know the USPS flate rate box for $8.10 can hold 4 12's with some packing material. Just don't tell them it's beer....
I'm working on the recipe conversion right now; well, I'm not but a friend with the software is, so we'll have both official recipes by days end...
I like the idea of sending 4 - 12oz bottles in one box. Personally, I don't think I could afford to send everyone beer. By the way, if anyone in the exchange is from AZ let me know. Maybe we can just drop off instead of ship....
I was getting worried we would be shipping beer to everyone on the list.
I like the idea of 4 beers, because I know that is a good package size.

I need to buy a new fridge for the house, maybe I can keep the box that comes in...
I need advice on how to do the lagering of the beer in 2ndry. I don't have fridge big enough for a carboy and it's too cold outside and I definately do not want a fruity flavor to the final product.
Also While I am more than willing to do the swap, I will be dumping a red irish als I made as it is sour so I am hoping I know why it went bad and won't have a problem with this brew. If it does come out bad I will inform the group on this post. I don't think it will be a problem though. 4 bottles is not a problem, but I would like to know how most of you ship them without them knowing it;s beer and how you package them to prevent breakage. Also anyone on the swap list from minnesota?
On another note, I am drinking a Bells Double cream stout and it is really good. Pricey at 11 bucks a 6 pak but it is very very good.,
AND on another nother note, I had my cochlear implant activated tuesday. The first day everything sounded like metallic pings. Next day voices were noticable. Today I am hearing very well and it's the first time in over 15 years that this ear has been able to hear, and it's just the beginning. Awesome.
Now lets get BREWING!!!!

As for lagering, you could try a swamp cooler. Basically a small pool, or chest big enough to hold a carboy, but filled with ice and water to keep it cool. You have to periodically check and replace the ice, which makes it a pain, but it's the cheapest solution I know.
For shipping, you can use the USPS flate rate box. Just go to your PO< ask for the box, they porbably have them on display. Pay the $8 there, and then fill it, seal it, address it, send it from your house. It fits in my mailbox, so I can just put it there, throw the little red flag up, and the mailman does the rest. I've done it multiple times without a problem.....
