Admiral Hops
Hello Everyone,
I have some Admiral hops, reputed to be high alpha (13%), but after 75 minute boil 4 ounces to 6 gallons, there is not enough bitterness, if I used Target hops, it would be really bitter. Has anyone any experience with admiral hops?

I'm guessing you want the hop flavour/aroma rather than bitterness. In which case bung an ounce of something with a little less alpha acid (EKG's for instance) about 10 minutes before the end of the boil. Of course, how much really depends on the recipe and style you're aiming for.
Do you have any brewing software such as Promash? It helps a lot when making up your own recipes.
