Another Rice Beer......

Here is my latest rice beer attempt.

1# 2-row
1/2# Flaked Corn
1/2# Flaked Rice
3# Muntons Plain Extra Light DME
3# Rice Syrup Solids
1oz Perle (60min)
1/2oz Northern Brewer (30min)
1/2oz Northern Brewer (5min)
Muntons Active Brewing Yeast (started 24hr before)

I will protein rest all grains @ 118-120 for 30 min.  Sac rest @ 155 for 90min.  Mash out at 170 for 5min.  Sparge and add DME / RSS and bring to boil.  Start boil clock when wort is at roiling boil and add Perle Hops.  At 30min let I'll add 1/2oz Northern Brewer Hops.  At 15 left I toss a whirfloc tab.  At 5 left I'll toss the other 1/2oz of Northern Brewer.  Flame out, chill, aerate, rack and pitch.  Will get you and OG when i brew it up.

 

Sounds good.
Comments:
30min is a long protein rest, maybe try 15 minutes.
90 min sac rest is a waste of your time.  You are going to get some conversion started even during the protein rest.  Regardless of that, it'll be convereted in like 30 minutes. 
You can check it with iodine if you want, but 90 is super long.


Don't listen to me though, do want you want first then make changes on a second run.

I mid boil now.  Settled for a 15min protein rest and a 60min sac rest (cuz I had other stuff goin on).  Will get you and OG in a few.

well, it sounds like you are shooting for some specific results.  With an O.G. of 1.068, it's pretty high ABV.  I question the brown sugar.  Why?  you had a good recpie going, and then at the last minute, you added willy nilly.  Was it just for the extra sugar content to promote a higher ABV?  Looking over your orginal recpie, you were shooting for a light crisp beer, with med body and med. bitterness. with a very nice aroma.  You never listed what yeast you were using.  I would have tried a Pilsner.  Without the Brown sugar though.  Keep us posted with your results.

 

Well... for one I drank the last batch.  And there was really nothing to it except for what I added, flavor wise.  What I was going for was a crisp high ABV light ale.  Secondly.... I have this serious problem of adding crap at a whim mid boil.

SO GIVE ME A BREAK!!!!!!!!!!!!!!!!!!!!!!

After thinking about the last brew I thought that aside from the secondary spices, there was really nothing there.  I mean if want to get wasted I could drink 2 dollar vodka.  But I love beer!!!  I brewed an experimental batch a while back with molasses and I loved it. I figured that maybe a touch of molasses flavor with an extra lil kick would add a little fizz to the mix.  And on second though I really need to stick to my original plans sometimes.  I mean. you are never going to get a feel for a "base-line brew" if you add crap at the last second.

PS.  My best meads have been made with last minute additions of  "extras".  I don't just add crap to add it.  I taste the wort/must and get a feel for it.  If I think there is a contribution needed then I add what i think is missing.  The same with when I rack to secondary.  I shoot a gravity, tasty the sample and add accordingly.  In the case of this current brew... all I could taste was sweet hops.  At least after the brown sugar it had an earthy flavor that brough out the malt sweet.

 

and if you look at the bottom of my ingredients list... it says I used a starter made from plain ol' Muntons brewers yeast.

 

What happened to the Reinheitsgebot (German Purity Law)?????????????
