Banana Bread Beer
When I was preparing my hefe starter today one of my roomates commented on how it smelled like banana bread. I was wondering if anyone knows of a recipe that highlights the banana esters associated with hefeweizen yeast and rich and complex malt flavors. Alliteration aside I think Banana Bread Beer could be delicious.
I don't know if the esters would last through a baking process. I suppose you could abuse some hefe yeast and let them work on a starter at 80 degrees or so, have them going ester crazy and then try to bake the slurry into some bread.
