Barley Wine




Need a good mixture of alcohol and flavor for this one. Please help.



 

I agree. Barley wine should have a good mixture of alcohol and flavor.  Although I prefer flavor then alcohol.

 

are you doing extract or all grain?  any commercial examples you like?  Just trying to get a little more info on what you want, so people will be able to get you going in the right direction.

 

Most people in their first BW attempts try going for huge flavor thinking they will get it out of specialty malts. The best ones I have made keeps the specialties still in check like an IPA, just increase your base malt to raise the gravity. I would keep the crystals under 10%, closer to 6-7%, The extra flavor and body will come from the higher FG, due tio a higher OG. A nice English pale malt as a base is a good start too.
