BKB Winter 2008 Community Brew
I've been thinking on an oatmeal stout for a while now. I haven't tried one since joining this board, so I'm in for a partial mash version.
I think I'd also like to do a spiced/mint Christmas brew.
Erock- go ahead & shoot that full recipe, extract or partial mash.
thirsty- How would yours convert to a partial mash, 5 gal ?
They both look great.
The Nose nipper is an extract but uses a pretty fair amount of specialty. I ran out of the house without it this morning but am only working a half day today.
I'll post it when I get home before I jump on Ace Combat 6.
Crap I suck.......got home Friday.....got on AC6, then before I knew it was Sunday.
I'll get this done tonight I swear.

I would vote for some sort of winter warmer. A strong ale, but still drinkable.
I am partial to my Holiday Ale so I am not likely looking for a winter brew right now. Maybe my vote doesn't count then.
But for something unspiced I would look to a rich American Amber, with a gravity that has been bumped up about 10 points and lots of flavor hops.

NOSE NIPPER HOLIDAY ALE
Approximate Starting Gravity: 1.054 - 1.070 Approximate Ending Gravity: 1.014 - 1.020 Approximate Bitterness: 31-37 IBU's
INGREDIENTS:
6.5 Lbs. Light DME
1 Lb. American 2 Row
4 Oz. Crystal 10L
6 Oz. Belgian Biscuit
4 Oz. Cara-Pils (dextrine)
2 Oz. Special B
3 Oz. Black Patent
1 Oz. Northern Brewer (at 60 min)
½ Oz Kent Goldings (at 30 min)
¼ Oz Kent Goldings (and 55 min)
¼ Oz dehydrated sweet orange peel (at 30 min)
½ regular sized peppermint candy cane (at 30 min)
2 cinnamon sticks (at 30 min)
½ Tsp Allspice (in secondary)
½ Tsp Nutmeg (in secondary)
¼ Tsp Ginger (in secondary)
¾ Tsp crushed Grains of Paradise (in secondary)
1 Tsp Irish Moss (at 45 min)
Safeale 05 (American ale) you could sub Wyeast 1056 if you want….that’d be pretty sway. 1038 Irish Ale would be pretty gangsta as well.
THE PLAN:
Bring 3 gallons of water to 160. Put grains in water (use a muslin bag if you like, or partial mash if it suits you) Water temp should stabilize round 150. Do the grain dance for 30ish minutes. Remove grain from water (press and toss for grain bag or mini sprage if you’re too cool for muslin bags). I do full boils so that’s how I’m gonna type this. Top up to 6.5 gallons, add DME and bring to a boil. Add hops….watch for catastrophic boil overs. If you have one……pause for clean up and pray to God that you don’t have an element stove. Start your 60 minute timer and rock out the ingredient list according to the times specified. There’s no need to put the spices in a bag. I didn’t and stuff was cool. Make sure to break up the peppermint stick into pieces so it dissolves quicker. After an hour, do the cool down dance until it's pitchy time. Do that deed and get that shizzle into a closet.
Just so everyone knows, this is a kit beer that Homebrew Heavan sells, but this is my variation. It's good and I like it.
I agree that I'd like to see the community brews be a little more simple and main stream. I'd love for us to do an Oatmeal Stout. I've been thinking about brewing one for awhile now. Anything too big will take awhile to age...and I personally don't like winter warmers or anything aggressively spiced.
