steep the oats baby! don't listen to the man who force feeds you what you can and can't steep. i have steeped with oats, you do get the mouthfeel and slight flavor. do you get more of a mouthfeel and flavor with all grain, yes, but don't be scared of steeping. you just have to realize if you're trying to get a similar beer to a sam smith's oat stout steeping the oats will leave you a little short of what your'e going for. you will still get a great beer though and you will def notice the qualities of the oats in the steeped beer. 

i did an experiement once, 2 stouts, same stout recipe, just one had a steeped lb of flaked oats in it. the characteristics were def there, getting a bit of that silky smooth mouthfeel that oat stouts are known for.

there are also oatmeal extracts now! hoowah. i have never seen them in a store but i have read about them on some blogs.

for now, go for the steeping, and just rinse your grain bag with about a quart of water you've brought up to 170 degrees when you're finished. don't ring the bag, just let it drip for a while.

also, with this grain bill it looks like it's calling for 2 lbs of flaked oats. if you're going to steep don't use 2 lbs. i've steeped up to a lb of oats and used two separate grain bags. with all grain brewing you are really gettign that full conversion of oats. with steeping you are really just trying to get some of the oat qualities. use a .5 lb to 1 lb if you're going to steep. this amount has worked in my experience.

yep, voting closed Oatmeal Stout is the winner. I know we have one recipe posted, we can take more suggestions or as a group tweak the one that has been presented, please present an extract and/or grain if possible based on a 5 gallon batch.

 

I vote we start a new thread entitled "Oatmeal Stout.....what the guy on the Quaker Oaks jar never thought of"

yeah......

But seriously....can we start another thread for just the recipe, discussion and results so it gets away from this 7 paged monster?
