BKB Winter 2008 Community Brew

winter is just around the corner, what do we want to brew that will keep our bellies warm and happy!!

Something pretty strong.  Barley Wine or Old Ale on the ale side or maybe a doppelbock or even an Eisbock on the lager side. 
An Eisbock would be a pretty interesting undertaking if you ask me.

 

I've been itching to try an eisbock, but I have to be gauranteed freezing weather to get the ice to form.

 

Forgot who had mentioned it earlier but I remember seeing a peppermint stick floating around one of these threads, the search gave me nothing. i would like to try taking a shot at formulating something close to anchor's x-mas, it changes every year and I've asked many places for a clone and no one seems to have one. I would like to formulate a base grain bill and hop profile for review, and was thinking that Anchor seems to not just have the hint of spice, but a coolness as well. Thinking some MO base, vienna, little aromatic, amber crystal, then maybe small amont of cinnamon, a couple stars of anise, and maybe some of that peppermint, any suggestions are welcome, but was thinking about a medium gravity that actually would be ready for x-mas, january-ish.

 

i have a spiced and vanilla'd porter in secondary that i am waiting to see how it truns out, but the scottish ale i brewed up in july is really going down well with this cooler weather we have been having. both of these types take a bit of ageing though.

lagering is out of the question for me, as is the eisbock. so i would lean toward...those beers that i can manage. whatever it is, i would suggest something that does not require too much ageing, so it can be ready for chaunakah/christmas/kwansa.

something with that hint of spice sounds good. i like the sam adam's winter ale, never had the Anchor. i assume it is something along the same lines?

Yeast? I am probably going to use wlp028 cause I have lots of it

Any suggestions/comments?

 

That sounds pretty good....with luck, I'll be able to join in on this brew....I should be completely moved in few weeks, and then I can start breaking out the cookpot and other assorted toys....yea!

 

Sounds nice.  What would a partial mash recipe look like?

 

with my vote i think i'll steer away from the heavier stuff and lean toward the heavier end of the middle if that makes sense. was thinking brown porter.

 

I'd be up for something spiced, since I've not made a lot of that type of brew.  I don't really have a good grasp on how cinnamon, nutmeg, & the like interact with hops & malt.  It would be nice to have a good first try.  Peppermint???  I'm confused.
