Black Day IDA from 6th Street Brewery



Thought I would share my India Dark Ale recipe:

Black Day IDA

Batch size: 12.25 gals.
Boil volume: 14 gals.
Boil time: 90 min
Efficiency: 74%
OG: 1.063
SRM: 28
IBU: 61

Ingredients:

12 lbs. German Pilsner
6 lbs. Marris Otter
1.59 lbs. Vienna
1.5 lbs. Carafa III
1.5 lbs.  White Wheat
0.5 lb. Caramel 60L
3 lbs. Corn sugar 10 min
1/2 tsp. Super moss 10 min
1 tsp. Yeast nutrient 10 min
3 ozs. Chinook (pellet) 12.7%  60 min
2 ozs. Centennial (whole) 11.5% 10 min
4 ozs. Centennial (whole) 11.5% 0 min
1 ozs. Chinook (pellet) 12.7% 0 min
6 ozs. Centennial (whole) 10% Dry hop 10 days
2 pkgs. Wyeast 1056 in a 10 L starter

Mash @ 149 for 90 minutes (1.3 qts./lb)
Mash out @ 168 for 10 minutes
Ferment at 68 F



 

How much roast/bitterness are you getting from the 1.5lbs of Carafa III?

 

Its actually still in the primary but initial tastings it seemed fairly low but there was definitely a bit there.  I believe in the end it should hide fairly well behind the hop character. I will update.  Should be transfering into keg to dry hop this weekend.

 

I sampled this when it was transferred to the secondary and there was a fair amount of roastiness.  Not dry stout roasty but fairly roasty.  It actually tasted pretty damn good.  Last time I used Chinook I had convinced myself that I didnt like it but I think I may have just changed my mind.  This should be good!



 

I've been thinking of making this, it sounds awesome! Based off of the final outcome of it, would you have any suggestions or modifications to the recipe?

This turned out really well the way it is.  If I were to make any changes I would lower the amount of corn sugar used by a pound and replace it with the pilsner.  I would also like to see how this would be with a Simcoe and Amarillo hop combo.  It might not be too bad by giving it a bit more roasty character by replacing a small amount of the carafa with roasted barley but that would likely change the balance fairly significantly.
Let us know if you brew it and what changes you make.  I need to do this one again.

 

How much pils would I need to add to make up for taking a pound of the corn sugar out? Sorry, i'm really not too familiar with using corn sugar.
If I have any extra hops lying around that will work I'll definitely switch them up!
Hopefully I can brew this pretty soon, but between the wind and school i may have to wait a bit, but I'll definitely give some updates.
