Brew recipes with extra light malt?
I'm planning on buying 55 lbs. of Munton's extra light dry malt extract from NB to save some cash. Needless to say, I'm going to be doing a lot of brewing with extra light malt extract. I see lots of recipes out there that call for light malt or amber malt. Can I still brew those recipes with my extra light malt? will there be a large difference in taste? Are there any specialty grains that can help me get the right color without the darker malt extracts?

Yeah, what Little Egypt said. After my first few extract brews I realized that there wasn't a big difference in taste between different extracts. I started using Munton's light DME exclusively and relied on specialty grains for color and some flavor. There was a homebrew club (it may have been the Green Bay Rackers) that tested the ferment ability of several malt extracts. Their results were that Munton's light DME was the most fermentable when using a very neutral yeast (though I forget which one). That's why I would only use Munton's light DME - worked great.
