Brewing beer with Tea.




I seem to be fixated on this idea currently, but I am still confused if it is even possible. I know people commonly make Kombucha, which is fermented tea, but it is not very alcoholic; about 1%ABV. I want something much more powerful but with a STRONG STRONG tea flavor and aroma. I think I am going to use some caramel rye malt and biscuit malt. IDK about a base malt yet; maybe just plain old 2 row. I also don't know about a yeast yet. I want to make a variation of a Sahti. I love DFH Sah Tea. I am thinking of making the beer and then adding some sun tea along with "dry hopping" a large quantity of tea leaves in secondary. I want to use chai tea and stick with alot of the flavor ideas of the sahti style, but I also want to add some earthy green tea. I think I know which teas I want to use, I just don't know how much to use for how many gallon batch. I also dont know about off flavors from the tea being in the secondary for too long. I also dont know how long the tea flavor will last. I know there are a few commercial examples of what I want to do, I just cant find any at the store I go to, which usually has just about everything. I need expert advice here.
