Cherry wheat




Hi I am new to homebrewing made a few batches so far so good but I really want to make a cherry wheat . does anyone have a good recipe?? I would prefer an extract recipe since I am new at this thank you.



 

I haven't brewed with extract in well over a year. My last cherry type beer was Cherry Bomb.

I would recommend a 7# tub of wheat malt extract, along with LOW alpha acid bittering and aroma hops of your choice, whatever you like.

Use real cherries! My last 2 batches of Cherry Bomb used extract and I truly hate it. I recommend adding at least 5# of cherries to the secondary fermenter, or the primary once the activity has slowed.

Start simple, don't go for a complex recipe. See how it turns out first.

Example: 7# extract, 5# (or more) REAL cherries, hell even pie cherries work great, then willamette, halletauer, tettnanger, cascade, saaz, liberty, glacier, or whatever else seems good to you.

Any wyeast or white labs that allows malt and hop character to dominate. I prefer British styles, although lately I have found wyeast 1056 has been very good!

 

Unless of course you are looking to duplicate something like Sam Adams Cherry Wheat.  They use cherry extract, which is why you also get an almond type of flavor in addition to the cherry.  They keep the pits in when they make the extract.  Some people like it, some people hate it.

Thank you for the advice I think I will go with the real cherries. I was also curious if I could use a puree instead of the whole cherries?

Sure, puree should work fine. I have not used it, but many, many recipes I have found use it. Since I live in Oregon, I have easy access to a HUGE array of fruit. Lots of farms throughout the Willamette Valley.

I recommend either pie, frozen, or puree. Let your wallet be your guide.

 

once agian I want to thank you for help out this rookie to brewin. I was also looking for a good strong porter recipe, any help there would be great thanks.

 

I would use frozen cherries if I were to do a fruit beer.  When fruit is frozen, the cell structure is broken down which helps to release more juice.  It's a little trick that I learned cooking that might translate well into brewing.
