Differences between English Pale, American Pale, and Belgian Pale?
I have a recipe for an American pale ale that I brew on a regular basis and I love it. Anyone have recipes for an English pale or Belgian pale ale? I'd like to brew these up and taste the differences.
If you consider a light colored ESB an English pale ale, I have one that I can give you. I have my recipe at home so I'll give it to ya later.
One is too funky
One is too hoppy
One is just right
Bitter Boy ESB
.50lb Cara-pils/Dextrine
.50lb Crystal 20L
6lbs light dry extract
2 oz Target hops (60 min)
1 oz East Kent Golding hops (15 min)
1 tsp Irish moss (10min)
1 oz East Kent Golding hops (15 min aroma hop steep)
1 pkg Wyeast London ESB ale (use starter)
Steep Dextrine and Crystal at 150-170F for 30 min
Boil extract and Target hops for 60 min
When there are 15 min remaining in the boil, add 1 oz Kent Golding hops
When there are 10 min remaining in the boil, add 1tsp Irish Moss
After the Boil add 1oz Kent Goldings and let steep for 15 min
Cool Wort to fermentation Temperature
Pour into fermentor and pitch yeast
Ferment in primary for 5 days at 65F
Ferment in secondary for 7 days at 55F

belgian pales bring the funk. american pales are too hoppy (if you listen to Brewchez). i don't necessarily think apas are too hoppy it's just that american brews lately have just been bordering on absurdity marked as "extreme beer". which is probably why brewchez goes for english pales and bitters (not as bitter as you think). they tend to be balanced with more malt backbone and adequate hops rather than trying to blow you out your seat.

AHHHHH, Just right!
Its true I am not a big hoppy beer fan. I enjoy a well balanced IPA occasionally (I had an endurance IPA last night with some baked Stuffed Shrimp...nice hop presence but not overly hoppy).
However, even though I say I am not a hop head for some reason I love Sierra Nevada Celebration ale. What's with that????
