Heavenly Wheat..... need help with hops.
In the secondary this afternoon. Smells ... well.... heavenly!!!!!!!

In a wheat? I would have to disagree. EKGs have a very distinctive flavor that stands out even at a 60 minute addition. You don't want that kind of flavor in a wheat. I love EKGs but they're just not for wheats.
I will bottle this weekend. After raking to secondary the beer has cleared completely and thee is no airlock activity.
In the bottle today. FG of 1.012... but since I never shot an OG I have no clue as to the ABV of this brew. Sample tatse was kind of like.... nothing. No hops, no honey and only a slight after taste of wheat. It is smooth on the tounge with little to no aftertaste. It almost wants to be spiced. I can almost taste the hops and I can almost taste the orange peel. In fact, the hint of taste you get after the wheat is like smelling sombody peel an orange. Can wait for it to carb up.
Poped a bottle today. Flat beer. Tastes good. Very noticible honey notes. The spices and hops are lost in the sweet. But there is a nice organey aftertaste.

THIS WHEAT FRIGGIN ROCKS!!!!!!!!!!!!!!!!!!!!!!!!! Try please!!!!! You'll dig it. Nothing super special. Just a nice wheat with a different mild twist.
This brew will be done again. Twice as much corriander in the boil and fresh orange peel in seondary then prime with honey. And this brew is going in the next beer festival competition.

2# Light Clover Honey
1/2 Tbl spn Crushed Coriander 5min before flame out.
1/4 Tsp Crushed Seeds of Paradise 5min before flame out

What hop though. I know it'll be spicy and I'd really love for the spice to be the front and center flavor. But I need a hop to balance the sweetness of the malt and honey.
I think that Simco Hops would go VERY well with that recipe. Where I am from basically only the breweries can get their hands on them, but if you could I would definitly recommend them.
