Heavenly Wheat..... need help with hops.



I want to do a spiced honey wheat but I have no clue what hops I should use.

4# Wheat DME (65% wheat, 35% Barley)
2# Light Clover Honey
1/2 Tbl spn Crushed Coriander 5min before flame out.
1/4 Tsp Crushed Seeds of Paradise 5min before flame out
1oz Sweet Orange Peel 5 min before flame out.

What hop though.  I know it'll be spicy and I'd really love for the spice to be the front and center flavor.  But I need a hop to balance the sweetness of the malt and honey.



 

I made a wheat ale last summer, with citrus essences; I used an ounce of Tetnang, and it came out pretty good.  I should have used more....I would recco raising the amount and putting the coriander in at 30 minutes....that's just me, I like that taste, and mine wasn't too overpowering at all.....

 

i just used tradition in a wheat to provide bitterness without adding flavor that would overtake the coriander, orange peel, and chamomile, and it worked out well.  Part of my choice was based on the current hop shortage and tradition was available smile

 

I agree with vinylawhl.
If you want the wheat beer to stand out and its spices, then get a good high alpha hop and use just enough to bitter the beer at 60min.  Then there will be very little flavor contribution from the hops and the spicing and honey note should shine through.



 

I'm a big fan of using Hallertauer hops in beers like that.  Like brewchez said, use your hops for some light bittering and let the spices really stand out.

EKG FTW!

 

Well here is what went into the brew pot.

1# Pale Wheat
4# 65/35 Munton & Fisson wheat/barley DME
3# White Clover Honey
1oz Perle 7.6% hops
1g cracked Seeds of Paradise
1tsp crushed Coriander
1oz Sweet Orange Peel
dry Muntons Ale yeast started 24hr before brewing

Protein rested the wheat @ 120 degrees for 30 minutes.  Sac rested @ 150 for 1 hour.  Mashed out @ 170 for 5 minutes.  Sparged and added DME and brought to boil.  Start boil time and added hops.  At 15 minutes left I added Coriander and my trust Whirfolc tab.  10 minutes left I added the Seeds of Paradise.  5 Left I added the Sweet Orange Peel.  At flame out I added the honey, chilled, strained and pitched yeast.

That recipe sounds really good!  I am anxious to hear how this one turns out!



 

Pulled the blow off line today and installed airlock.

 

A bubble every 45 seconds.

........ and has cleared up quite well.  I plan on a week or two in secondary as I want a clear, clean beer outta this one.  Don't know why, just want a clean and clear beer.

 

In the secondary this afternoon.  Smells ... well.... heavenly!!!!!!!

In a wheat? I would have to disagree. EKGs have a very distinctive flavor that stands out even at a 60 minute addition.  You don't want that kind of flavor in a wheat.  I love EKGs but they're just not for wheats.

 

I will bottle this weekend.  After raking to secondary the beer has cleared completely and thee is no airlock activity.

 

In the bottle today.  FG of 1.012... but since I never shot an OG I have no clue as to the ABV of this brew.  Sample tatse was kind of like.... nothing.  No hops, no honey and only a slight after taste of wheat.  It is smooth on the tounge with little to no aftertaste.  It almost wants to be spiced.  I can almost taste the hops and I can almost taste the orange peel.  In fact, the hint of taste you get after the wheat is like smelling sombody peel an orange.  Can wait for it to carb up.

 

Poped a bottle today.  Flat beer.  Tastes good.  Very noticible honey notes.  The spices and hops are lost in the sweet.  But there is a nice organey aftertaste.
