Help finding a Woody/Oaky yeast
I am looking for a yeast that produces a distinct wood or oak flavor. I have found WLP013 London Ale Yeast, BrewTek110 and 200. The problem is, the brewteks are not sold anymore and my local brew store doesn't carry WL. I would like to find one from Wyeast. But if there is one that has a noticeable flavor profile I desire and someone has experience with it, I'll use that. Oh and p.s., I need an Ale yeast not a lager. Thanks! ![]()

Dry, malty ale yeast. Provides a complex, oakey ester character to your beer. Hop bitterness comes through well. This yeast is well suited for classic British pale ales, bitters, and stouts. Does not flocculate as much as WLP002 and WLP005."
I don't think its going to do what you think it's going to do. Wyeast 1028 London Ale yeast, I'm guessing, would be the wyeast equivalent to that white labs. What are you brewing?

I am getting the recipe ready for when I bottle the porter and the carboys are free I am going to do that mild. The malt bill will be something like:
2.5# Mild Ale malt
.75# Honey malt
.75# Crystal 10L
.5# Toasted Pale Malt
.33# Flaked Barley
I think the nice oak, wood flavor would compliment that bill nicely. I could add those Oak chips I have, but I want a subtle flavoring so I figured if the yeast produced it, that would be perfect.
I can agree with your desire for the flavor in the beer you want, just not sure if its really a yeast derived flavor. I think you might be more likely to find that type of thing from certain hops.
Where have you experienced this flavor before?

I am basically looking for a similar flavor in scotch whiskey or even bourbon.
What hops do you recommend would have the flavor profile I am looking for?
I say use whitelabs/wyeast scottish ale yeast and use a modest amount of your oak chips on the cold side.
