Honey Brown (partial)
Okay so ive been wanting to play around with gambrinus honey malt so i came up with this recipe that i might make this weekend. Its a basic partial mash.
Mash
1.5 lb Pale 2-row
1lb Vienna
5oz Chocolate malt
10oz. Honey malt
Protein rest at 120F for 20mins, raise to 152F for 35mins, then sparge at 170F
Extract
3.3lbs munton light
2lb Light DME
1oz northern brewing
1oz target (maybe fuggles)
45min boil, northern brewing hops at 30mins, target at 10mins, and I'm probly gonna use Safale us-05 dry yeast.
Im not really sure about the amount of vienna malt, or the 152F. I was thinking about going lower for more fermentables, but i think this beer might need more body.
Okay I changed the name to Soltice American Brown.. i ended up during a multistep mash with 15 min protein rest, 10min at 149F, and 30min at 155F then mashed out at 170. The boil went as planned except i used .5oz of target pellets in the last 10, .25oz of cascade aroma, and did a 60min boil. Looks good, tastes great. I have a question tho.. I used a 5gal plastic bucket with holes drilled in it as my lautertun however it wasnt filtering very well. I ended up using an old nylon grain bag as a ghetto filter and the clarity improved.. nonetheless has anyone else had this problem with this type of lautertun?? i think it may have been caused by my premilled grains... they looked alittle over milled.. i just hope i dont get any nasty tannin flavors.
