how much blackberry extract to use?




ive got an amber wheat beer in primary right now and i was wondering if any of you guys had any recommendations as to how much of the blackberry extract to use when i rack it into secondary and how to evenly distribute the extract without aerating the brew by stirring it and whatnot...i bought a 4oz. concentrated blackberry extract and it says to use 2.0oz. for a 5 gallon brew, but im afraid of overpowering my beer....its only my second batch but dear lord i love this stuff...
my first brew was a simple pale ale thats in the bottles right now in my garage (unusually cool winter up here in the northeast) covered with a tarp and i snuck one last night, not quite finished but better than alot of beers ive tasted recently, not that im done with my tangent, heres the recipe i used for the blackberry amber wheat:

Ingredients (5  gallon batch):

3.3lb. Can Mutton and Fisson Light Unhopped Extract
2.0lb. Bag of Unhopped Wheat Dry malt
1.0 oz. Cascade Pellet Hops (Boil)
0.25 oz./0.25 oz. Saaz/Cascade Pellet Hops (Flavor)
0.25 oz. Cascade Pellet Hops (Aroma)
1 tsp. Irish moss


Procedure:

i removed 1 1/4 cup of wheat malt and saved it for priming.


45 Mins: Add Boil Hops - 1.0 oz.
15 Mins: Add Irish moss - 1 tsp.
10 Mins: Add Flavor Hops - .50 oz.
2 Mins: Add Aroma Hops - .25 oz.



 

no one has any idea??? ill just use 2 oz. and hopefully it wont overpower the brew

 

i found on an online store that 2oz is appropriate for 5 gallons but you could go as high as 4 oz, so 2oz should be safe. it says add at bottling

 

do i just pour it in and hope that it distributes evenly? how do i mix it in? any idea?

Mix it in like you would priming sugar.  If you are bottling, start racking the beer into the bottling bucket and when you have an inch or so of beer in the bucket gently pour the flavoring into the bucket and let the swirling action of the beer mix the flavoring into solution.  If you are kegging, just do the same thing as you are racking the beer into the keg.

While I haven't used blackberry, I have used raspberry extract and just used the whole bottle and it worked really well.  There was enough flavor and aroma, but not overwhelmingly so.

Yes this is a late reply. I haven't been on here in 4 days. LOTS of things going on lately.

I have used blackberry extract. I'll give you my straight up perspective on it. I was NOT impressed. Mine didn't taste anything like it said.

As for how much to use, use as recommended. I used 2 oz per 5 gallons. It was not overpowering at all. The flavor wasn't even close to real blackberries though.

 

to be honest, it doesnt smell a whole lot like blackberries either. i figured with i shouldnt go with anything too sweet and the blackberries smelled a tad bit right for the job...thanks alot guys...i appreciate your help

 

I guess 2 oz would be best . This would really make a good taste
