Idea for a good mead...

I've never done a mead before. I read a recipe book to make a good one., it sounded good. I don't have any prickly pears handy, so what would you all recommend as a first-timer's recipe? I've followed this forum for a few weeks to get some ideas, the ginger recipes don't really appeal to me. Maybe something with raspberries? Thanks!
