Lawn Darts...an in experiment sugars. how very scientific.



damn thing is almost complete. i am waiting for it to clear.

though i have to say this is going to be one heck of a cleaning. i lost about a quart of beer during blow off and the carboy now has dried and caked yeast krausen all over it. i am going to need some elbow grease on this one.



 

Betcha that's gonna be a dry beer.

 

Ordered today, should brew by Friday.

 

I guess I should get my act together and brew up some of this experimental beer. Hopefully later in the week.



 

Well this being the holiday week screwed up the shipping so I may just wait til I get back from Vegas to brew.  I also scaled down the batch to 3 gallons, cuz i was a knuckle head and only ordered 3 pounds of DME.  I'll use the left over hops in a batch of braggot.

 

i bottled sunday june 30th; FG was 1.001, OG was 1.065. i am going to chill one tonight and see where the carbonation and the all important flavor are at.

if it is ready, i am going to drink too much tonight. if it is not ready, i am going to pout.

 

brewed today as per said procedure.  OG 1.047.  Made a yeast starter 1 hour prior to start of brewing w/ DME and molasses.  Active ferment within the hour.  Rolling ferment within 3.  Going to go to Vegas for 4 days so we'll see what happens while I am gone.

 

I can't wait to here how that corn sugar kicked beer tastes.
I am going to brew up mine this weekend, got the stuff and I am ready to go.



 

well i tasted it last night...not fully carbonated yet, but should be by wednesday. the beer was dry, but not too dry. and strangely fruity..is this the safale-04 yeast? i have never used it before, and was not expecting these esters, almost banana-like. that may just be my palate though.

overall completely drinkable and refreshing. i could definitely picture myself consuming this in the yard with the boys lawn bowling or trimming the hedge.

 

breskinewbski, you used three pounds of molasses and only got a 1.047?

interesting, i was expecting something a bit more agressive. i have to admit i was surprised by my 1.065 OG with the corn sugar. and that yeast really kicked some tuchus in the fermenting process, i have yet to get a finish this low, a fermentation this complete.

i am looking forward to hearing how those beers turn out, gentlemenses.

SG today is 1.010 and looked to be finished.  Racked to secondary to await priming sugar (somethin I forgot to order).  I don't know if it's done fermenting for sure as i just got back from Vegas after 5 days.  SO I'll be shooting gravity measurements for a few days.  The house was around 65 the whole time so I think that may have slowed the process a bit.

I have heard from a master brewer at a micro brewery in the next town that safe-ale 04 throws of a lot of banana like flavors.  Might have to try some in a Heffe.

 

crap. those banana esters haunt me wherever i turn. they seem to be getting more intense. i will drink this because i brewed it, but if the banana flavor gets any more intense i will be developing character as i drink it.

 

What was your estimated ABV?  I am wondering if the alcohol level prematurely knocked your yeast out, so they left too much diacetyl behind etc etc.  Such a vigorous fermentation may have stressed the yeast so much that when fermentation was done they couldn't do that typical "clean-up" that occurs with still healthy yeast.
DO you know what I am talking about?

Regardless, this is good information.

If its really that bad, blend it with something else.  Life is to short to drink bad beer.

 

BTW the brown sugar brew is getting kicked off tonight, maybe I'll do another sugar too, just to make up for my super tardiness.

 

my ABV was about 7.5. it was a very vigorous fermentation intitially, but it still kept the engine running for three or four days afterwards, so i woul dhope that those little yeasties did some house cleaning. the beer is clear as all get out and has a good yellow gold color. maybe it is because my bottle storing is at about 74 degrees F. i didn't sweat this initially since i think that it is still a reasonable temperature, but perhaps that is it.

i don't know what i am going to do. the little missus wants to give a bottle or two to some people she works with, so i am going to chill another bottle right now and give it a taste test. we will see where we are at. if it stinks, i will let her give it away and let someone else do all the drinking...i just can't bring myself to pour it out.
