Lemon wheat




I don't use promash for recipes. Don't like it. So here is my lemon wheat recipe.

NOTE: 10 GALLONS ALL GRAIN, adapt to fit

16# domestic pale, 4# wheat, 4 oz Mt Hood hops 4.3 AA @ 60, 4 oz Saaz 3.3 AA @ 15, no aroma because I wanted the lemon flavor to come through. I used 10 real lemons in the batch.

I split the yeast, 5 gallons had wyeast 1275, the other had 1318. I like to experiment.

Mashed in between 145-147, held for 1 hour, sparged at 170 for about an hour, yield 12 gallons. Pitched yeast and let sit for between 7-10 days.

Cut up all 10 lemons into chunks about the size you would garnish a glass with. Racked both fermenters into secondary and divided lemons between batches. Racked to keg after another 7-10 days.

No brewing salts used or mash accelerator.

OG = 1.050, FG = 1.010, ABV = 5.1%

Note on the yeast: for wheat beers I prefer low to medium flocculation, fruity, some hop character, less malty, with smooth finish. That said, I still like to try different styles.



 

I thought you mentioned in another post how well this brew turned out.  Which yeast did you prefer and why?

When you use this # as in  "16# domestic pale",  does that stand for pounds?

I saw your amber recipe in another thread and was just wondering.

 

Actually, I have only kegged the 1318 batch so far, so I can't compare them. I like 1318 because it gives a slightly sweet finish, which it nice for my fruit beers.

When I keg the 1275 batch I'll let you know how that turns out. I really like this one so far. Slightly hazy, not real sweet, good lemon flavor without being lemonade. Not bitter at all.

Yes I'm just too lazy to spell out pounds, although I just did it.

 

wanted to make sure this sounded tasty.
I tried my first yellow belly a couple years ago and was hooked, then they stopped making it.
Go figure.

 

I am going to start this recipe on April 20th I think.  My girlfriend is really skeptical about how homebrew turns out versus how much you spend to get started.  I asked her what kind of a beer she might like and she thought she might like a lemon wheat.  I will post my mods and results as I go along.  Cheers!
