I love the flavor of lime. For me, there is also nothing better than adding a lime wedge to a frosty brew on a hot summer day. So, I was thinking of doing a Mexican style ale soon and adding some lime flavoring. What would be the best way to add the lime flavoring into the beer without simply squeezing a lime wedge into it? Does anybody have an extract recipe for a lighter summer ale flavored with lime?
I recently read some article about using citrus type fruits in beer. There was a lot of biology and talks of acids and proteins that was over my head but basically said if you like the flavor of an orange, lemon or lime in your beer then do what you are already doing and add it to the glass. This might have been only if you want a more intense flavor since its obviously possible to get some flavor: miller chill and bud lime.
Yeah, I guess I'm not really looking for an intense lime flavor in my beer. I've had Miller Chill and I don't even think it tastes like beer....to me, the stuff is pretty nasty. My favorite Mexican beer is Tecate and I just like the subtle lime flavor that is in it. I also like to add a little lime flavor by squeezing a wedge into a Dos Equis Amber some times.
I might try just using a pale ale or Mexican amber kit and adding some lime extract (do they make this?) to get the flavor I'm looking for. Fruit extracts seem to be the easiest way to go and the best way to avoid "off" flavors.
You might want to try zesting some lime skin (removing the green from the pith), boiling it for a minute of two in a cup of water, chilling the water briefly and adding it to your secondary.
That's a trick that chefs use for adding citrus to things. You could just throw it in with the pith, but that will add a lot of bitterness for any amount of citrus flavor.

Might be kind of obvious, but could there really be a better way of adding lime to your beer than simply adding lime to your beer when you drink it? In other words, the best time to add it is probably with a fresh wedge when you drink it. Nothing else will be as fresh.

You can also find them cheaper at Asian markets, if you live near a city that has one.
