Mack and Jacks African Amber clone



Hmmmm, I've been meaning to visit the mall of america, maybe we can have a BKB field trip in the summer.  Post a thread in the pub section deafcone, and we'll see who what's to get together.

Notes

you can use the orange peels of any 1 orange, the flavor will just be more pronounced for a few weeks, but will mellow nicely, with the dried version it mellows quicker. Feel free to use different yeasts, but the wlp005 is exact in flavor profile, and esters. The real stuff is just a little sweeter, I attribute this to the house yeast.

There it is Brewski, ask and you shall receive.  Damn I love beer smith.  Actually I never made a partial mash of this i'm sure it will be great.  I just made the extract for 1 can of muntons, seems easy enough.  I hate when they say 2.3 oz of liquid extract.  Pisses me off, Ha ha.

With a bit of irony, I just finished unpacking all of my latest shipment which is for the amber on friday, and a belg blond for next week. The last time I made this M&J amber I snuck in a 1/2# of special roast. Came out so good I wanted to do this again in duplicate. When I ordered from midwest, after I clicked submit, I realized I never ordered the special roast! So I called them up and had them manually tack it onto my order. When I just unpacked I realized they shipped me special B, not special roast! So I guess this beer is getting neither, cuz spec B will just add too much sweetness I think. And you know how much I loooove spec B.

Anyway, brewing this up again friday.

 

Just thought I would report on the latest M&J adventure.

As you may recall, my brewing buddy that moved to Seattle brought 2 bottles of Original Mac & Jack's, which he transferred from a growler to a 3gal corny, then bottled.  That was about 3 weeks ago.

On Sunday night we compared the version in my 3/10 post to the Seattle version.
Keeping in mind that the bottles were almost flat.
I'm pouring from a keg, a brew with 2 weeks in primary, less than a week in 2ndry, & carbed in 4 days.

Color was almost identical
Clarity the same
The orange/hop complexity was very similar, but as we all know, very hard to define.
The Seattle version seemed maltier & smoother, while mine had more aroma, slightly more hop flavor, and finished drier.
We liked them both.

 

The color would probably be the same if you didn't put that god damn special B into it, Ha ha.
     I'm sure you nailed it, use the wlp 005 i'm telling you it's the closest to their house yeast.  Either way you said yours was great, and i'm sure it was.  Now that you had some of the real stuff, i'm sure you understand my obsession with this one, I really can't find a reason not to always have this on hand, it goes with everything.

I'll be up in a few weeks, and i'll bring some of mine, and we can compare.
