Hi, I'm new to the forums and homebrewing in general. I just wanted to say that I'm from the Seattle area and I love me some Mac n Jack's and I currently have this recipe fermenting! Hopefully I can share some good news with you guys within a couple weeks ![]()
Excellent. Keep us posted. It's going to be my next brew but not sure if I'm making it before may 1st or after. I'm moving may 1st so don't want a beer in the fermenter during the move .I have a stout to bottle yet too.

Good luck on the move... never a fun task. Having some homebrew around will help draw in the helpers though.

It's been 3 days and no post on this thread, so I thought i would keep it going.
I was big into this beer 5-7 years ago, but haven't had any in quite a while. After reading the all the raving on this thread I thought a road trip to the brewery was in order. I have to be in the area today anyway, so I'll load up a few growlers and see if they will divulge any secrets.
you should pick some up to ship out to us out here on the wrong side of the country. I'd pay for it of course, and with how popular it seems to be I'm sure others would too.

Sorry, I only got one growler of the African Amber and one of the Porter. But before my next trip over I will take orders. I'm not sure when that will be though.
Anyway, I only got two questions out before the guy in the pour room clammed up, and said, "Everyone tries to clone our beer and we don't divulge anything about them!"......(nice guy)
1. They use wheat in all of their beers.
2. They do a single infusion mash at "normal" ale temps.
He also said that you can't get the yeast strain for the A.Amber unless you pull it from their beer. It's not available.
I've never pulled yeast directly from the beer, just from lees.
Would I make a 1.040 starter and add 10-12oz of beer to it, on a stir plate, with oxygen?
Just bottled my MJ clone. Tasted "OK" but we will see what several days\weeks in the bottle will do. Probably will not be tempted to sample in less than a week.
OG was 1.060 and FG was 1.020. Had a great color to it. We will see.
